FROM FARM TO YOUR CUP, THE SHORT WAY. 

The beans come direct from coffee farms in the Santa Ana region of El Salvador, then travel to our small roastery right here in Dallas, where we roast them in small batches every month. This coffee is a washed lot from small producers on the mountainous slopes of Santa Ana, grown at 1100–1600 meters and sorted to European Preparation standards for a clean cup.

The result is a coffee with structure and sweetness that still feels easy to drink. Higher-elevation growing and washed processing typically contribute to a denser bean and a cleaner, more balanced cup, which fits this coffee’s medium body and medium acidity.

BREWS BEAUTIFULLY, HOWEVER YOU MAKE IT. 

This is an everyday workhorse coffee. It shines as a standard drip or pour-over, and it pulls a rich, sweet shot in an espresso machine. One detail espresso and super-automatic owners will appreciate: these beans roast up dry, not oily. Oily beans gum up grinders and clog the bean hoppers on super-automatic machines — so a non-oily medium roast like this one is exactly what those machines are built for. Fill the hopper and don't think about it.
